RECIPE: Mom's Award-Winning Irish Soda Bread

Nothing says St. Patrick's Day like Irish Soda Bread. This bread goes so fast in my house that I usually make TWO loaves.  It's more moist than most traditional recipes so if you prefer a drier, more crumbly consistency, use less buttermilk than the recipe calls for. My daughter is an Irish dancer and competes in regional feisseana. Sometimes they offer an Irish Soda Bread Baking Competition. Back in 2021 we submitted my mom's recipe and both times it came in 3rd place! Give it a try and let me know what you and your family think!

Ingredients:

3 cups flour

2/3 cup sugar

1 tablespoon baking powder

1 teaspoon baking soda

1 1/2 cups raisins

2 eggs lightly beaten

2 1/2 cups buttermilk

2 tablespoons melted butter

Directions:

  1. Preheat oven to 350 degrees
  2. Sift together dry ingredients, add raisins, mixing well to coat raisins with flour
  3. Combine egg, buttermilk and butter in another bowl, then add to dry ingredients
  4. Mix lightly only until dry ingredients are moistened
  5. Turn batter into greased and floured 8 1/2" loaf pan or cast iron fry pan
  6. Bake at 350 degrees about one hour
  7. Cool on wire rack
  8. Serve at room temperature or my personal favorite: warmed in a toaster oven with a pat of butter spread on top. Yum!
